Bookmakers have slashed the squeaky-voiced star's odds of winning tonight from 1/3 to 1/6.
Paul Burrell is second favourite - but he has blown his chances of being crowned King of the Jungle by waffling on about Diana, Princess of Wales.
Bookies had taken a flurry of bets on the former butler in the last few days.
But after last night's show, in which he talked about his devotion to Diana,
his odds have drifted.
Ladbrokes spokesman Warren Lush said: "Paul started off as rank outsider but had been winning over the viewing public. Unfortunately for him, talking about Diana seems to have harmed his chances.
"Joe is our hottest ever favourite and it's going to take a big swing in public opinion to deny Joe the title of King of the Jungle. He has looked like the winner from day one."
Burrell is 4/1 to win while nightclub boss Fran Cosgrave is 12/1.
The three celebrities will compete in a final Bushtucker Trial tonight before the winner is revealed.
It is an all-male final after Janet Street-Porter was evicted last night.
The toothy broadcaster described her jungle campmates as a "bunch of
deadbeats".
But she admitted liking the others once she got to know them.
"In a perverse, sick kind of way, I actually enjoyed it," she said.
