Let it snow, let it snow, let it snow

This week I went to Josh Newis Smith’s event, which he hosted at Kit and Ace on Regent Street.

It was super fun and there were plenty of cocktails and even fake snow inside the store!

I wore my favourite top and skirt from Self-Portrait and clutch from Folli Follie.

Busy baking

I have been doing lots of baking this week. I find when I am stressed it’s such a great way for me to wind down at home in the evening whilst doing some work.

These chewy banana and coconut cookies are super easy to make and there’s no wheat or dairy involved!

Here’s the recipe:

Ingredients: 1/4cup of pecans, 1/4cup of almonds, 1/8 cup of brazil nuts, 1/2 cup of unsweetened desiccated coconut, 2 very ripe bananas, 1/4 cup of pitted dates, 1 tsp vanilla extract, 1 tsp baking powder. For the topping 1/2 banana sliced and juice of 1/4 lemon.

1. Preheat your oven to 180 degrees

2. Blend the nuts in a food processor until they are chopped into a flour like texture

3. Place the blended nuts into a bowl and repeat with the banana and dates in a food processor

4. Add the banana date mixture to the bowl along with all the other ingredients

5. Mix very well with a wooden spoon

6. Place about a tablespoon of the mixture onto parchment lined baking tray and smooth out into a flat circular shape

7. Repeat until all the mixture is used

8. Press a slice of banana gently into the middle of your cookie and add a few drops of lemon juice over the banana

9. Bake in the oven for 30 minutes or until just crispy on the outside, still chewy in the middle
