Asparagus and Prawn Stir-fry

Ginger and chilli pep up this seasonal stir-fry

Asparagus is in season, so now is the perfect time to try this Asparagus and Prawns Stir-fry.

Low in calories and cholesterol, rich in vitamins and fibre, asparagus can be part of a healthy detoxing diet. Buy it fresh from your local farmers’ market and cook within a day or two, before it deteriorates and loses its nutrients.

Ingredients

200g asparagus, chopped

10 king prawns, shells off

5g ginger

1 lime

4 tbsp fish sauce

1 1/2 tbsp brown sugar

1 tbsp extra virgin olive oil

1 onion

1 red chilli

3 cloves of garlic

5 spring onions

fresh coriander

100g basmati rice

Sauté the prawns in oil for a few minutes, until they turn pink. Remove from the pan and set aside.

Add ½ tablespoon of olive oil to the pan and fry the onion for two minutes. Finely chop the chilli, garlic and spring onion, and cook with the onion until they have softened. Add the prawns back to the pan along with the asparagus and fry for a few more minutes.

Grate the ginger and mix it with the lime juice, fish sauce and sugar. Pour the sauce over the stir-fry and cook until the mixture becomes sticky. Sprinkle with coriander and serve immediately with basmati rice.
