Taste assessment: Is it too dry? Is it too crumbly? That’s the test of any good gluten-free product — and in both respects, Peace of Cake’s lemon loaf is a winner. The flour blend — buckwheat, tapioca, rice and maize — bonds perfectly, creating a moist texture,while the lemon icing is not too sweet to overpower the flavours of the loaf. Selfridges is offering more than 20 Peace of Cake products (prices from £2.49-£4.49), from Raspberry Abricotines and Vanilla Cupcakes to nut-infused chocolate Brownies. Peace of Cake’s blueberry muffins won a gold star at this year’s Great Taste Awards and a Commended Award at the FreeFrom Food Awards.
